Ingredients
Cream Cheese Mixture:
- 8 ounces cream cheese, softened
- 3.4 ounces package pistachio Jell-O instant pudding mix
- 20 ounces crushed pineapple, including juice (in 100% juice, not syrup)
- 1 cup miniature marshmallows
- 8 ounces Cool Whip or 1 cup heavy whipping cream, whipped to stiff peaks
Optional Toppings:
- 1 cup heavy whipping cream
- ¼ cup powdered sugar
- ½ cup chopped pistachios
- Maraschino cherries
Instructions
- Cream Cheese Mixture: In a large bowl, beat the cream cheese and pudding mix together until light and fluffy.
- Assembly: Spoon the filling into a cooled pie crust and chill for at least two hours.
- Optional Toppings: Beat whipped cream and powdered sugar together until stiff peaks form. Pipe onto the top of the pie. Add maraschino cherries and sprinkle with chopped pistachios.
Beat in crushed pineapple, including juice. Stir in marshmallows. Fold in Cool Whip or whipped cream.
Notes
