Ingredients

Dough Ingredients

  • 1 cup warm water
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1/4 teaspoon honey
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon kosher salt
  • 1/4 cup extra-virgin olive oil, plus 4 tablespoons divided

For the Christmas Tree Bread

  • 1 bunch fresh sage
  • 1 bunch fresh rosemary
  • A few sprigs fresh thyme
  • 1/4 cup fresh cranberries, halved
  • Pinch of salt and pepper

For the Flowers Bread

  • 3 to 4 green onions
  • A few chive sprigs
  • 1 shallot, peeled and thinly sliced
  • 1/4 cup sliced black olives

Instructions

  1. Activate the yeast: In a large bowl, combine warm water, active dry yeast, and honey. Stir a few times to mix, then let the mixture sit for 5 minutes until it becomes foamy, indicating the yeast is active.
  2. Begin the dough: Add 1 cup of all-purpose flour and 1/4 cup of olive oil to the yeast mixture. Stir until the flour is fully moistened, then let the mixture rest for another 5 minutes to develop gluten and improve texture.
  3. Complete the dough: Stir in the remaining 1 1/2 cups of flour and the kosher salt. When the dough begins to come together, turn it out onto a floured surface and knead 10 to 15 times until the dough is smooth and elastic.
  4. First rise: Place the dough into a large bowl that has been lightly oiled. Cover with a towel and let it rise at room temperature for 1 hour until it has doubled in size.
  5. Preheat the oven: Set your oven to 450°F (232°C) to get it ready for baking the focaccia.
  6. Prepare the baking pan: Use 2 tablespoons of olive oil to generously oil a 9×13-inch (or larger) rimmed baking sheet, preventing sticking and adding flavor.
  7. Shape the dough: Transfer the risen dough onto the prepared baking sheet. Press the dough down with your fingers to fit the pan in no larger than a 9×13-inch shape. Dimple the dough surface with your fingertips, then drizzle the remaining 2 tablespoons of olive oil over the top. Let the dough rise again for 20 minutes until it puffs slightly.
  8. Decorate Christmas tree bread: Using fresh sage, rosemary, and thyme, arrange the herbs on the dough to form a Christmas tree design. Add halved cranberries as ornaments, then sprinkle a pinch of salt and pepper evenly over the top for seasoning.
  9. Decorate flower bread: Arrange green onions to resemble stems, place thinly sliced shallots as flower petals against the stems, scatter chive sprigs for smaller stems, and spread sliced black olives around to fill empty spaces, creating a charming floral design.
  10. Bake the focaccia: Place the decorated focaccia in the preheated oven and bake for 15 to 20 minutes, or until the bread is golden brown and cooked through.
  11. Cool and serve: Remove the focaccia from the oven and transfer it to a wire rack to cool completely before slicing and serving to preserve the texture and flavor.

Notes

  • Make sure your water is warm (about 110°F) to properly activate the yeast but not hot enough to kill it.
  • Kneading the dough the right amount ensures a tender and airy bread – avoid over-kneading.
  • Use fresh herbs of good quality for the best flavor and visual appeal in your decorations.
  • Allowing the dough to rise twice helps create a light and fluffy focaccia texture.
  • You can customize the toppings based on seasonal or personal preferences.
  • Cool the focaccia completely on a wire rack to prevent sogginess.
