Crispy and flavorful smashed potatoes roasted to golden perfection with garlic, onion powders, and fresh herbs. This easy recipe creates a delicious side dish that’s crispy on the outside and tender inside, perfect for any meal.

Ingredients

Potatoes

  • 2 pounds small yellow potatoes
  • 2 teaspoons sea salt (divided)

Seasoning & Garnish

  • 2 tablespoons extra-virgin olive oil (plus more for the pans)
  • 1½ teaspoons garlic powder
  • ¾ teaspoon onion powder
  • Freshly ground black pepper, to taste
  • 1 tablespoon finely chopped fresh herbs (parsley, chives, and/or dill)
  • Flaky sea salt (optional)
  • Parmesan cheese (optional)

Instructions

  1. Preheat the oven and prepare baking sheets: Preheat your oven to 425°F (220°C) and generously coat two baking sheets with olive oil to prevent sticking and promote crispiness.
  2. Boil the potatoes: Place the potatoes and 1 teaspoon of sea salt in a large pot. Add enough water to cover the potatoes by about 1 inch. Bring the water to a boil and cook the potatoes until they are soft and fork-tender, which usually takes 15 to 20 minutes.
  3. Drain and smash potatoes: Drain the cooked potatoes and let them cool slightly for easier handling. Place each potato on the oiled baking sheets, then use the back of a measuring cup or a similar flat object to smash them down to about ¼-inch thickness.
  4. Season and roast: Drizzle the smashed potatoes with olive oil and sprinkle with the garlic powder, onion powder, remaining teaspoon of sea salt, and freshly ground black pepper. Roast in the oven for 25 to 35 minutes, or until the potatoes turn golden brown and develop crispy edges. Make sure to rotate the pans halfway through roasting for even cooking.
  5. Garnish and serve: Remove the potatoes from the oven and season them to taste with additional sea salt or flaky sea salt. Sprinkle with finely chopped fresh herbs and, if desired, add a light dusting of Parmesan cheese before serving for extra flavor.

Notes

  • You can use any small potatoes, such as red or baby Yukon Gold, if yellow potatoes are not available.
