Ingredients
Linguine Pasta:
8 oz linguine pasta
Chicken:
2 boneless skinless chicken breasts
Seasoning:
2 tsp olive oil
2 Tbsp unsalted butter
1 1/2 to 2 Tbsp cajun seasoning, divided
3 garlic cloves, minced
2/3 cup diced tomatoes
1 1/2 cup heavy whipping cream
1/2 cup grated parmesan cheese
2 Tbsp parsley, finely chopped, to serve
Instructions
Cook Pasta: Boil water, cook pasta until al dente, then drain and keep warm.
Prepare Chicken: Season chicken with cajun seasoning, sear, cook, and slice thinly; keep warm.
Make Sauce: Saute butter and garlic, add tomatoes, cream, cajun seasoning, and parmesan; simmer.
Combine: Add chicken, pasta to sauce, toss until warmed through.
Serve: Garnish with parmesan and parsley.
