Ingredients

Linguine Pasta:

  • 8 oz linguine pasta

Chicken:

  • 2 boneless skinless chicken breasts

Seasoning:

  • 2 tsp olive oil
  • 2 Tbsp unsalted butter
  • 1 1/2 to 2 Tbsp cajun seasoning, divided
  • 3 garlic cloves, minced
  • 2/3 cup diced tomatoes
  • 1 1/2 cup heavy whipping cream
  • 1/2 cup grated parmesan cheese
  • 2 Tbsp parsley, finely chopped, to serve

Instructions

  1. Cook Pasta: Boil water, cook pasta until al dente, then drain and keep warm.
  2. Prepare Chicken: Season chicken with cajun seasoning, sear, cook, and slice thinly; keep warm.
  3. Make Sauce: Saute butter and garlic, add tomatoes, cream, cajun seasoning, and parmesan; simmer.
  4. Combine: Add chicken, pasta to sauce, toss until warmed through.
  5. Serve: Garnish with parmesan and parsley.
