Ingredients
For the Beef:
1 ½ lbs. Boneless beef sirloin steak, pounded thin and cut into strips
1 1/2 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
For the Mushroom Gravy:
2 tbsp butter
1/2 yellow onion, sliced
8 oz. white button mushrooms, sliced
2 tsp garlic powder
3 tbsp all-purpose flour
1 tsp paprika
1/4 cup dry sherry, or extra beef broth
2 cups low sodium beef broth
1/3 cup sour cream
1 to 2 tbsp freshly chopped parsley
Instructions
Prepare the Beef: Season beef sirloin steak strips with salt and pepper. Sear in a hot skillet with olive oil.
Make the Mushroom Gravy: Cook onions and mushrooms, then add garlic, flour, and paprika. Deglaze with sherry, pour in beef broth, and stir in sour cream.
Combine and Serve: Add steak strips back to the skillet, garnish with parsley, and serve over hot cooked egg noodles.
Notes
For a richer sauce, you can use heavy cream instead of sour cream.
Adjust the seasoning to your preference by adding more salt and pepper as needed.
