This Creamy Beef Stroganoff Recipe features tender strips of steak in a delectable brown mushroom and onion gravy. A comforting and satisfying dish perfect for any occasion.

Ingredients

For the Beef:

  • 1 ½ lbs. Boneless beef sirloin steak, pounded thin and cut into strips
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

For the Mushroom Gravy:

  • 2 tbsp butter
  • 1/2 yellow onion, sliced
  • 8 oz. white button mushrooms, sliced
  • 2 tsp garlic powder
  • 3 tbsp all-purpose flour
  • 1 tsp paprika
  • 1/4 cup dry sherry, or extra beef broth
  • 2 cups low sodium beef broth
  • 1/3 cup sour cream
  • 1 to 2 tbsp freshly chopped parsley

Instructions

  1. Prepare the Beef: Season beef sirloin steak strips with salt and pepper. Sear in a hot skillet with olive oil.
  2. Make the Mushroom Gravy: Cook onions and mushrooms, then add garlic, flour, and paprika. Deglaze with sherry, pour in beef broth, and stir in sour cream.
  3. Combine and Serve: Add steak strips back to the skillet, garnish with parsley, and serve over hot cooked egg noodles.

Notes

  • For a richer sauce, you can use heavy cream instead of sour cream.
  • Adjust the seasoning to your preference by adding more salt and pepper as needed.
