Ingredients

Main Ingredients:

  • 3/4 cup mayo
  • 1/4 cup greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon dijon mustard
  • 1 teaspoon garlic paste
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Additional Ingredients:

  • 1 rotisserie chicken, shredded
  • 3/4 cup craisins
  • 1/2 cup chopped walnuts, toasted
  • 1 celery stalk, chopped
  • 3 scallions, diced

Instructions

  1. Prepare Dressing: In a medium bowl, whisk together mayo, Greek yogurt, lemon juice, mustard, garlic paste, salt, and pepper.
  2. Mix Ingredients: Add shredded chicken, craisins, walnuts, celery, and half of the scallions to the dressing; combine well.
  3. Serve: Portion the chicken salad onto bread with lettuce and enjoy!

Notes

  • Lime juice can be used instead of lemon juice.
  • Substitute 2-3 cooked, shredded chicken breasts for the rotisserie chicken.
  • The salad’s flavors develop more when chilled but still taste great when served immediately.
  • Swap sour cream for yogurt if preferred.
  • For a lighter mayo taste, mix mayo and yogurt or sour cream half and half.
