Instructions

  1. Peel and slice bananas: Peel the bananas and carefully slice them into ½-inch (1.25 cm) thick rounds. Each banana should yield about 10-12 slices depending on its size.
  2. Spread peanut butter on banana slices: Line half of the banana slices on a plate or baking sheet covered with parchment paper. Using a small amount of peanut butter, spread a layer over each slice, then top each with another banana slice to form a sandwich.
  3. Freeze the banana sandwiches: Place the peanut butter banana sandwiches in the freezer for at least 30 minutes to firm up and make them easier to dip.
  4. Melt the dark chocolate: Place the chocolate chips and coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring well between each, until the chocolate is fully melted and smooth.
  5. Dip the banana sandwiches in chocolate: Using one or two forks, gently dip each peanut butter banana sandwich into the melted chocolate to coat evenly. Return the chocolate-covered bites to the parchment-lined plate or baking sheet.
