Ingredients

For the Salad:

  • 1 (15-ounce) can chickpeas, rinsed and drained (425g)
  • 2 ripe peaches, pitted and diced
  • 1/2 cup red onion, thinly sliced (75g)
  • 1/2 cup cucumber, diced (75g)
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup crumbled feta cheese (optional) (30g)

For the Dressing:

  • 3 tablespoons lime juice, freshly squeezed (45ml)
  • 2 tablespoons honey (30ml)
  • 2 tablespoons olive oil (30ml)
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper to taste

Instructions

  1. Prepare the Dressing: In a small bowl or jar, whisk together the lime juice, honey, olive oil, and Dijon mustard. Season with salt and pepper to taste.
  2. Combine Ingredients: In a large mixing bowl, combine the rinsed and drained chickpeas, diced peaches, thinly sliced red onion, diced cucumber, and chopped fresh mint leaves. Add the crumbled feta cheese if using.
  3. Add Dressing: Pour the honey-lime dressing over the salad ingredients. Toss gently to ensure everything is evenly coated.
  4. Chill and Serve: For the best flavor, chill the salad in the refrigerator for at least 15 minutes before serving.
