Ingredients

  • 16 ounces pasta, cooked al dente
  • 1/2 cup diced onion
  • 1 cup diced green pepper
  • 2 tablespoons minced garlic
  • 3 tablespoons unsalted butter

Cheese Sauce:

  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup plain Greek yogurt
  • 2 cups shredded cheddar cheese
  • 2 cups shredded mozzarella cheese

Additional Ingredients:

  • 114.5 ounce can diced tomatoes, drained well
  • 16 ounces cooked cubed chicken
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 12 teaspoons dried oregano

Instructions

  1. Preheat the oven: Preheat the oven to 350 degrees. Spray a 9×13 pan with nonstick spray.
  2. Sauté vegetables: Place the onion, green pepper, and butter in a large skillet and sauté for 2-3 minutes.
  3. Make cheese sauce: Stir in flour and cook for another minute or two. Whisk in the chicken broth. Remove from heat and add yogurt, cheddar cheese, and mozzarella cheese. Stir until smooth and melted.
  4. Combine ingredients: Stir in cooked pasta, garlic, chicken, and tomatoes. Season with salt and pepper.
  5. Assemble and bake: Spoon pasta into the prepared dish. Top with remaining cheese and sprinkle with oregano. Bake for 23-25 minutes, then broil for 2 minutes to brown the top. Serve hot.
