Ingredients

Strawberry Base

  • 1520 large strawberries, washed and hulled

Cheesecake Filling

  • 4 oz cream cheese
  • 1/4 teaspoon vanilla extract
  • 1/4 cup powdered sugar

Topping

  • 2 large sheets graham cracker, crumbled

Instructions

  1. Hollow the strawberries: Use a small spoon to carefully hollow out the center of each strawberry without breaking the walls. Set the hollowed strawberries aside on a tray for filling.
  2. Prepare the cheesecake filling: In a small bowl, combine the cream cheese, vanilla extract, and powdered sugar. Mix them well until the mixture is smooth and creamy.
  3. Fill the strawberries: Using a small spoon, scoop 1 to 2 teaspoons of the cream cheese mixture into each hollowed strawberry, gently packing the filling to the top.
  4. Add the graham cracker topping: Dip the top of each filled strawberry into the crumbled graham crackers, pressing lightly so the crumbs adhere to the cream cheese filling.
  5. Chill and serve: Place the stuffed strawberries in the refrigerator and chill until ready to serve, allowing the flavors to meld and the filling to set slightly.

Notes

  • Use fresh, firm strawberries for best results and easier hollowing.
  • For a firmer filling, chill the cream cheese mixture before filling the strawberries.
  • Graham cracker crumbs can be substituted with crushed nuts or cookie crumbs for variation.
  • These can be prepared a few hours ahead and kept refrigerated until serving.
  • Ensure strawberries are completely dry before filling to help the topping stick better.
