Carrot Cake Bars
1/2 cup melted butter
1 cup packed light brown sugar
1 large egg
1 tablespoon vanilla extract
1 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup shredded carrots
Cheesecake Swirl
4 ounces cream cheese, room temperature
1/4 cup granulated sugar
1 large egg yolk
3/4 teaspoon vanilla extract
Instructions
Preheat Oven: Preheat the oven to 350 degrees Fahrenheit. Grease an 8×8 baking pan or line it with parchment paper.
Prepare Carrot Cake Bars: Melt butter, mix with brown sugar, add egg and vanilla. Combine with flour, cinnamon, baking powder, salt, and shredded carrots.
Prepare Cheesecake Swirl: Beat cream cheese and sugar until smooth, then add egg yolk and vanilla.
