A delicious and quick Caramelized Spam and Eggs recipe featuring crispy seared Spam glazed in a sweet soy sauce, paired with fluffy scrambled eggs, served over steamed white rice and topped with flavorful garnishes like fried garlic, furikake, sesame seeds, and green onion.

Ingredients

Sauce

  • 1 tablespoon soy sauce
  • 1/4 cup water
  • 2 tablespoons sugar

Eggs

  • 6 large eggs (whisked)
  • 1/4 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 tablespoon oil (for scrambling)

Main

  • 1 can (12 oz) Spam (diced into 1-inch cubes)
  • 2 cups cooked white rice

Toppings

  • Furikake
  • Green onion (chopped)
  • Fried garlic (see notes for preparation)
  • Sesame seeds

Instructions

  1. Make the glazing sauce: In a small mixing bowl, combine 1 tablespoon soy sauce with 1/4 cup water and stir until mixed. Set aside for later use.
  2. Prepare the eggs: Crack 6 large eggs into a mixing bowl, add 1/4 teaspoon salt and 1/4 teaspoon white pepper, then whisk thoroughly until well blended and slightly frothy.
  3. Scramble the eggs: Heat 1 tablespoon oil in a medium pan over medium heat. Pour in the whisked eggs and gently stir with a rubber spatula, folding the eggs slowly until they begin to set. Stop stirring when the eggs have just set at the bottom but remain glossy and slightly wobbly on top. Remove from the pan and set aside.
  4. Cook the Spam: Using the same pan, heat over medium until hot. Add the diced Spam pieces and sear each side for about 1-2 minutes until browned and crispy all around.
  5. Season and glaze the Spam: Sprinkle 2 tablespoons sugar evenly over the cooked Spam and toss to coat. Pour in the prepared soy sauce mixture and toss again to cover the Spam evenly. Let it simmer for 3-4 minutes, stirring occasionally, until the soy sauce thickens into a glaze that coats the Spam beautifully.
  6. Serve: Place 2 cups of cooked white rice on serving plates. Top the rice with the caramelized Spam and scrambled eggs. Garnish generously with fried garlic, furikake seasoning, sesame seeds, and chopped green onion for added flavor and texture.

Notes

  • Fried Garlic: Thinly slice garlic cloves and fry in hot oil until golden and crispy. Drain on paper towels and use as a crunchy topping.
  • To make the scrambled eggs fluffy, avoid over-stirring and remove from heat while they are still glossy and slightly runny.
  • Adjust sugar quantity to taste for a more or less sweet glaze.
  • Furikake is a Japanese seasoning blend often containing seaweed, sesame seeds, and dried fish flakes; it adds umami and texture.
  • For a lower sodium version, reduce soy sauce or use a low-sodium alternative.
