Indulge in the delightful flavors of fall with this homemade Caramel Apple Fudge. A luscious treat reminiscent of green caramel apple suckers, this fudge combines the sweetness of marshmallows and white chocolate with a hint of apple cider for that classic caramel apple taste.

Ingredients

For the Fudge:

  • 1/4 cup (57g) unsalted butter
  • 3 cups (129g) mini marshmallows
  • 1/2 cup (99g) granulated sugar
  • 1/2 cup (118ml) heavy cream
  • 3 packets apple cider drink mix (0.74 oz each)
  • 3 cups (510g) white chocolate chips

For the Caramel Swirl:

  • 1/2 cup caramel bits or caramel squares like Kraft brand
  • 1 1/2 Tbsp heavy cream

Instructions

  1. Prepare the Pan: Line an 8×8 inch baking pan with 2 layers of tin foil, leaving an overhang.
  2. Make the Fudge: In a large pot, combine butter, marshmallows, sugar, heavy cream, and apple cider drink mix. Cook over medium heat, stirring occasionally until marshmallows are melted.
  3. Prepare the Caramel: In a microwave-safe bowl, combine caramel bits and heavy cream. Microwave at 50% power in 45-second intervals until smooth.
  4. Combine Ingredients: Remove the pot from heat and stir in white chocolate chips until melted. Pour the fudge into the prepared pan.
  5. Add the Caramel Swirl: Drizzle the melted caramel over the fudge and use a spatula to create swirls.
  6. Chill: Refrigerate the fudge for 3 hours, then cut into squares. Store in the fridge for best results.
