A flavorful and easy-to-make burrito bowl featuring seasoned ground beef, warm rice, fresh avocado, pico de gallo, Mexican cheese, corn, sour cream, and cilantro. Perfect for a quick weeknight meal or customizable lunch bowl.

Ingredients

Protein

  • 1 lb ground beef (85% lean)
  • 2 tbsp taco seasoning

Base

  • 2 cups cooked rice (warm)

Toppings

  • 1 large avocado (chopped)
  • 1 cup Pico de Gallo
  • 1 cup Mexican cheese (shredded)
  • 1 cup corn
  • 1/3 cup sour cream
  • 1/4 cup cilantro (chopped)

Instructions

  1. Cook Rice & Brown Beef: Begin by cooking the rice according to the package instructions or your preferred method. While the rice cooks, preheat a medium-sized pan over medium-high heat. Add the ground beef to the hot pan and cook it until browned and no longer pink, ensuring it reaches an internal temperature of 160°F for safety. As the beef nears completion, sprinkle the taco seasoning over it and mix well to combine. Cover the pan with a lid to keep warm and set aside.
  2. Assemble the Burrito Bowl: To assemble, start by placing the warm cooked rice on the bottom of your serving bowl as the base layer.
  3. Layer & Top: Next, layer the seasoned ground beef over the rice. Add chopped avocado, a scoop of fresh pico de gallo, shredded Mexican cheese, corn kernels, a dollop of sour cream, and sprinkle the chopped cilantro over the top. Serve immediately and enjoy your homemade burrito bowl!

Notes

  • Use freshly cooked rice for best texture and warmth.
  • You can substitute ground beef with ground turkey or chicken for a leaner option.
  • For a vegetarian version, replace ground beef with seasoned sautéed mushrooms or beans.
  • Adjust the amount of taco seasoning to suit your spice preference.
  • Feel free to add extra toppings like black beans, jalapeños, or lime wedges for additional flavor.
