This blueberry-banana peanut butter parfait is a quick and delicious layered breakfast featuring fresh fruit, creamy yogurt, and the nutty flavor of peanut butter. It combines sliced bananas and juicy blueberries, layered with smooth or crunchy peanut butter and vanilla Greek yogurt, topped with a drizzle of honey for a sweet and satisfying start to your day.

Ingredients

Fruit

  • 1 medium banana, peeled
  • ¼ cup fresh blueberries, divided
  • ⅛ teaspoon ground cinnamon

Dairy & Nut Butter

  • 1 tablespoon crunchy natural peanut butter
  • ¼ cup whole-milk vanilla strained (Greek-style) yogurt

Sweetener

  • ½ teaspoon honey

Instructions

  1. Slice and mash banana: Slice the medium banana and place half of the slices (about ½ cup) in a medium 12-ounce jar. Sprinkle ⅛ teaspoon ground cinnamon over the banana slices, then mash with the back of a fork until no large chunks remain, creating a smooth base layer.
  2. Add blueberries: Top the mashed banana with 2 tablespoons of fresh blueberries, distributing them evenly over the banana layer.
  3. Spread peanut butter: Add 1 tablespoon of crunchy natural peanut butter and spread it into an even layer on top of the blueberries to add nutty flavor and texture.
  4. Layer yogurt: Spoon ¼ cup of whole-milk vanilla strained Greek-style yogurt over the peanut butter layer, smoothing it out evenly.
  5. Drizzle honey: Drizzle ½ teaspoon of honey evenly over the yogurt layer to add natural sweetness.
  6. Top with remaining fruit: Finish the parfait by placing the remaining banana slices and 2 tablespoons of fresh blueberries on top, completing the beautiful layered parfait.

Notes
