Ingredients

Fruits and Sweeteners

  • 2 bananas
  • 150 grams dates
  • 50 grams honey
  • 100 grams raisins

Dry Ingredients

  • 175 grams rolled oats
  • 20 grams flax seeds
  • 1 teaspoon ground cinnamon

Liquids

  • 100 ml water

Instructions

  1. Mash the Bananas: Peel and mash the bananas in a bowl until smooth and set aside.
  2. Prepare Date Paste: Chop the dates into small pieces and place them in a pan. Add the water and honey, then simmer gently for a few minutes until the dates soften and the mixture thickens into a paste.
  3. Combine Dry Ingredients: In a large bowl, mix the rolled oats, raisins, ground cinnamon, and flax seeds together evenly.
  4. Mix Wet and Dry Ingredients: Add the mashed banana and the prepared date paste to the dry mixture. Stir thoroughly until all ingredients are well combined and form a sticky, uniform mixture.
  5. Prepare Baking Tin: Line a 28 cm by 18 cm (11″ by 7″) tin or a similarly sized baking dish with non-stick parchment paper. Transfer the mixture into the tin, spreading and pressing it down evenly using a spoon or fork to level the surface.
  6. Bake the Flapjacks: Preheat the oven to 160°C (325°F, Gas Mark 3). Place the tin in the oven and bake for 20 to 30 minutes, until the edges begin to turn golden. To ensure even baking, rotate the tin halfway through the baking time.
