Ingredients
Mashed Banana:
1 cup mashed banana (2–3 very ripe bananas)
Honey Mixture:
1/4 cup honey
1/4 cup coconut oil, melted
2 tablespoons almond milk or dairy milk
1 egg
3/4 cup plain Greek yogurt
1 teaspoon vanilla
Dry Ingredients:
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
Add-ins:
1/4 cup mini chocolate chips
Instructions
Mash Bananas: In a large bowl, mash up the bananas and then stir in the honey and melted coconut oil.
Prepare Wet Ingredients: Beat the egg into the mixture until incorporated, then add the milk, Greek yogurt, and vanilla.
Combine Dry Ingredients: In a small bowl, combine the flour, baking soda, baking powder, and salt.
Mix Batter: Add the dry ingredients to the wet ingredients and add the chocolate chips. Stir until just combined. Do NOT over-mix.
Rest Batter: Let the batter rest for at least 10 minutes to allow the flour to absorb some moisture.
Preheat Oven: Preheat the oven to 350 degrees and line a muffin pan with parchment paper liners.
Fill Muffin Tin: Using a 1/4 cup scoop, add the batter to each muffin tin to make about 16 muffins.
Bake: Bake for 15-17 minutes or until lightly browned.
