Baked Feta Potatoes are a delicious, rich side dish inspired by the viral baked feta pasta trend. This recipe features crispy roasted potatoes infused with aromatic herbs and baked with creamy feta cheese. Roasted garlic and fresh basil add depth of flavor, complemented by a touch of honey and zesty lemon, making it an irresistible combination perfect for any meal.

Ingredients

Potatoes

  • 2 large baking potatoes

Cheese & Dairy

  • 1 200g block of feta cheese

Herbs & Seasonings

  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes

Oils & Sweeteners

  • 2 tbsp olive oil
  • 1 tbsp honey

Other Ingredients

  • 1 head of garlic (top cut off)
  • 1 lemon, halved
  • 1/4 cup (20g) fresh basil

Instructions

  1. Preheat the Oven: Set your oven temperature to 200°C (390°F) to prepare for roasting the potatoes and garlic.
  2. Par-boil the Potatoes: Wash and cube the potatoes. Place them in a saucepan, cover with water, and bring to a boil. Par-boil the potatoes for 6-8 minutes to soften slightly but not fully cook. Drain and steam dry for 2-3 minutes to remove excess moisture.
  3. Season the Potatoes: Transfer the par-boiled potatoes to a baking dish. Add dried thyme, oregano, salt, black pepper, and 2 tablespoons of olive oil. Stir well to ensure even coating of seasonings and oil on all potato pieces.
  4. Prepare the Garlic: Drizzle a little olive oil over the head of garlic, wrap it in foil, and place it in the baking dish with the potatoes. This will roast the garlic alongside the potatoes, softening and sweetening its flavor.
  5. Roast Potatoes and Garlic: Roast in the oven for 30-40 minutes until the potatoes are golden, crispy, and nearly cooked through.
  6. Add the Feta: Remove the baking dish from the oven and carefully take out the foil-wrapped garlic. Place the block of feta cheese in the center of the baking dish. Optionally dip one side in seasonings before flipping to cover all sides with flavor. Squeeze the juice of half the lemon over the feta and potatoes.
  7. Bake the Feta: Return the dish to the oven and bake for another 15 minutes, allowing the feta to soften and melt.
  8. Prepare Roasted Garlic: When garlic has cooled, squeeze the softened garlic cloves out of their skins and mash using the flat side of a knife to create a smooth paste.
  9. Combine Ingredients: Stir the mashed roasted garlic, juice from the remaining half of the lemon, and fresh chopped basil into the baked potatoes and feta mixture. Gently fold to combine without breaking up the potatoes too much.
  10. Finish and Serve: Drizzle honey over the dish, sprinkle with shredded basil and red chili flakes for heat and freshness. Serve immediately and enjoy the rich, flavorful baked feta potatoes.

Notes

  • This recipe was updated in May 2025 to par-boil the potatoes before adding the feta to achieve extra crispy potatoes and perfectly melty feta cheese.
  • If you prefer a milder garlic flavor, use only 1-2 teaspoons of the mashed roasted garlic instead of the entire head.
