Perfect for a delicious breakfast or brunch, this recipe is easy to prepare, uses simple ingredients, and offers a delightful balance of tangy, savory, and spicy flavors.

Ingredients

Vegetables

  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper, diced
  • 1/2 small red onion, diced
  • 3 cloves minced garlic
  • 1 cup chopped baby spinach

Dairy

  • 8 ounces feta cheese
  • 4 large eggs

Oils & Spices

  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes

Optional Toppings

  • Chopped fresh basil or fresh chives

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for baking the vegetables and feta cheese.
  2. Prepare Ingredients for Baking: If using individual ramekins or serving dishes, divide the tomatoes, diced bell pepper, red onion, minced garlic, and feta cheese evenly among 4 oven-safe dishes. Drizzle one tablespoon of olive oil over each dish. If using a single large baking dish, combine tomatoes, bell pepper, red onion, and garlic in the dish and place the feta cheese in the center. Drizzle olive oil over the veggies and feta.
  3. Mix Spices: In a small bowl, combine dried oregano, sea salt, dried thyme, black pepper, and red pepper flakes. Mix well.
  4. Season the Dishes: Sprinkle the prepared spice mixture evenly over the feta and vegetables, making sure to distribute equally if using separate ramekins.
  5. Bake the Veggies and Feta: Place the ramekins on a baking sheet or the large baking dish directly onto the oven rack. Bake at 400°F for 25 minutes to allow the vegetables to soften and the feta to start melting.
  6. Mix in Spinach: Remove the dishes from the oven and stir gently to combine the melted feta with the roasted vegetables. Add the chopped baby spinach and stir it into the mixture until evenly distributed.
  7. Add Eggs: Make a small well in the center of each ramekin or make four wells in the large dish. Crack one large egg into each well carefully.
  8. Bake Again: Return the dishes to the oven and bake for an additional 10 minutes, or until the eggs are cooked to your liking (set whites and slightly runny yolks are recommended).
  9. Add Fresh Herbs: Remove from the oven and top with optional fresh chopped basil or chives for added brightness and flavor.
  10. Serve: Serve the baked feta eggs warm with crusty baguette, toast, or pita bread for dipping and enjoying the rich sauce.

Notes

  • You can prepare this dish in individual ramekins for easy serving or one large baking dish for a family-style presentation.
  • Adjust the baking time for eggs based on your desired doneness; less time for runny yolks or more time for fully set eggs.
  • Fresh herbs are optional but highly recommended for enhanced flavor.
  • This dish pairs beautifully with toasted bread to soak up the delicious baked cheese and vegetable mixture.
  • Feel free to swap spinach with kale or arugula if preferred.
