Ingredients

Vegetables & Cheese

  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper, diced
  • 1/2 small red onion, diced
  • 3 cloves garlic, minced
  • 1 cup chopped baby spinach
  • 8 ounces feta cheese

Spices & Seasonings

  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes

Other Ingredients

  • 4 tablespoons olive oil
  • 4 large eggs
  • Optional for topping – chopped fresh basil or fresh chives

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for baking the vegetables and cheese.
  2. Prepare Vegetables and Feta (Individual Servings): If using ramekins or individual oven-safe dishes, evenly divide the tomatoes, diced bell pepper, red onion, minced garlic, and feta cheese between the four dishes. Drizzle each with a tablespoon of olive oil.
  3. Prepare Vegetables and Feta (Single Dish): If using one large baking dish, combine the tomatoes, diced bell pepper, red onion, and garlic in the dish. Place the feta cheese in the center and drizzle all with olive oil.
  4. Mix Spices: In a small bowl, mix together the dried oregano, sea salt, dried thyme, ground black pepper, and red pepper flakes.
  5. Season the Dish: Sprinkle the combined spice mix evenly over the feta and vegetables in each dish or across the single dish.
  6. Bake First Stage: Place ramekins on a baking sheet or put the baking dish directly in the oven. Bake for 25 minutes until the vegetables are soft and the feta begins to melt.
  7. Combine Feta and Vegetables: Remove the dishes from the oven and stir to blend the melted feta evenly with the cooked vegetables. Add the chopped baby spinach and stir gently until combined.
  8. Add Eggs: Create a well in the center of each ramekin or four wells if using one dish. Crack one egg into each well carefully.
  9. Bake Eggs: Return the dishes to the oven and bake for an additional 10 minutes until the egg whites are set but yolks remain slightly runny, or cook longer to desired doneness.
  10. Garnish and Serve: Top with optional chopped fresh basil or fresh chives. Serve immediately with crusty baguette, toast, or pita bread for dipping and enjoying the rich, savory flavors.

Notes

  • For a spicier dish, increase the amount of red pepper flakes according to your taste.
  • Use fresh cherry tomatoes for best flavor—frozen or canned will affect texture.
  • You can substitute spinach with kale or arugula if preferred.
  • Baking times may vary depending on oven and dish size; monitor eggs closely to avoid overcooking.
  • This recipe is great for meal prepping; assemble in advance and bake fresh when ready to eat.
