Ingredients

Apple Filling

  • 550 g (4 and 1/2 cups – 4 medium) chopped cubed apples
  • 30 g (2 tablespoons) granulated sugar
  • 25 g (2 tablespoons and 1 teaspoon) all-purpose flour
  • 2 teaspoons lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Crust & Crumbles

  • 280 g (2 cups) all-purpose flour (dip and sweep method)
  • 185 g (3/4 cup and 1 tablespoon) unsalted butter, cut into small cubes, cold
  • 105 g (1/2 cup) granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (177°C). Grease an 8-inch (20 cm) square oven-proof dish and line the bottom and sides with parchment paper, allowing about 2 inches (5 cm) of overhang on each side for easy removal of the bars later.
  2. Prepare Apple Filling: Peel, core, and slice the apples into small pieces. In a medium bowl, toss the chopped apples with lemon juice, sugar, flour, cinnamon, and nutmeg until evenly coated. Set the mixture aside to marinate slightly.
  3. Make Crust & Crumbles: In a large bowl, combine the flour, cinnamon, and sugar. Add the cold cubed butter to the flour mixture. Cover the butter with the flour mixture to prevent sticking, then cut the butter into the flour using two forks, a pastry blender, or your fingertips, until the mixture resembles coarse crumbs.
  4. Assemble the Bars: Spread two-thirds of the crumb mixture evenly into the prepared baking dish using a floured spoon or your hand. Press it down lightly to form a crust. Layer the apple filling evenly over the crust. Sprinkle the remaining one-third of the crumb mixture over the apples, breaking it into larger crumbles by squeezing with your hands.
  5. Bake: Place the dish in the preheated oven and bake for 55 minutes or until the top is golden brown and the crumbles are crunchy. Remove from the oven and let cool completely at room temperature for 1 to 1.5 hours. For faster cooling, you may place in the freezer after it cools to room temperature.
  6. Serve and Store: Once completely cool, use the parchment paper overhang to lift the bars out of the dish. Cut into 16 equal pieces. Store leftover bars in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
