This easy apple cider bread is made with real apple cider, fresh apples, and covered with crunchy cinnamon sugar, reminiscent of a cozy, spiced apple cider donut.

Ingredients

For the Bread

  • 2 cups apple cider
  • 1/2 cup unsalted butter, softened
  • 1/3 cup granulated sugar
  • 1/3 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon table salt
  • 4 teaspoons apple pie spice
  • 1 1/4 cup shredded apples (1 large apple)

For the Coating

  • 2 tablespoons unsalted butter, melted
  • 5 tablespoons cinnamon sugar, divided

Instructions

  1. Reduce Apple Cider: Place apple cider in a pan on the stove, bring to a low boil, reduce heat, and simmer until it reduces in half. Let it cool.
  2. Preheat Oven: Preheat oven to 350 degrees. Prepare a 9×5 bread pan by spraying with nonstick baking spray and sprinkling with 1 tablespoon cinnamon sugar.
  3. Prepare Batter: Beat softened butter and sugars until creamy. Add egg, vanilla, and shredded apples; mix well. Add flour, baking soda, baking powder, salt, spice, and 1 cup reduced apple cider. Gently mix until combined.
  4. Bake: Pour batter into prepared pan. Bake for 50-52 minutes or until a skewer inserted in the center comes out with a few crumbs.
  5. Cool and Coat: Let the bread cool in the pan for 15 minutes. Flip out and let cool for 1 hour. Brush the top with melted butter, sprinkle with cinnamon sugar, and let the coating set before slicing.
