This Apple Cider Banana Bread is a moist, flavorful loaf combining ripe bananas, tart Granny Smith apple, and spiced reduced apple cider for an autumn-inspired twist on a classic banana bread.

Ingredients

Wet Ingredients

  • 1 cup apple cider, reduced to 1/4 cup
  • 2 large bananas, ripe (about 225g mashed)
  • 1 large Granny Smith apple, grated (135g)
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • ¼ cup (50g) canola oil
  • ¼ cup (70g) reduced apple cider

  • 1 cup (200g) brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups (260g) all-purpose flour

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F. Grease and line a large metal loaf pan with parchment paper; avoid using glass or ceramic pans to ensure even baking.
  2. Mix sugar and eggs: In a large bowl, whisk together the brown sugar and eggs until very well combined. Then add mulling spices if desired, salt, and vanilla extract, mixing thoroughly.
  3. Add oil: Slowly pour in the canola oil while continuously whisking until fully incorporated into the mixture.
  4. Add fruit components: Mash the ripe bananas and stir them into the batter. Grate the Granny Smith apple and add it along with the reduced apple cider, folding gently to combine.
  5. Add leavening and flour: Sprinkle baking soda over the batter, followed by the flour. Whisk just enough to combine the ingredients, avoiding overmixing to keep the bread tender.
  6. Fold in nuts: If using, fold in chopped pecans to add texture and flavor to the bread.
  7. Bake: Pour the batter into the prepared loaf pan. Bake for about 1 hour and 10 minutes if using a pullman pan or until the top springs back when pressed. For smaller loaf pans, start checking at 55 minutes to avoid overbaking.
