Ingredients

Apple Filling

  • 2 cups apples (peeled, cored, and chopped)
  • 1 teaspoon ground cinnamon
  • 1 tablespoon granulated sugar

Main Batter

  • 1/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter (1 stick), softened
  • 2/3 cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 cup milk

Glaze

  • 1/2 cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease an 8.5 x 4.5 x 2.5-inch loaf pan with non-stick cooking spray to ensure easy release after baking.
  2. Mix Cinnamon Sugar: In a small bowl, whisk together the brown sugar and 1 teaspoon of ground cinnamon. Set this mixture aside for topping the bread later.
  3. Cream Butter and Sugar: In a large mixing bowl, use an electric mixer to cream the softened butter and 2/3 cup granulated sugar together until the mixture is light and fluffy. This step ensures a tender crumb.
  4. Add Eggs and Vanilla: Beat in the eggs and vanilla extract just until combined, avoiding overmixing to keep the bread tender.
  5. Combine Dry Ingredients: In a separate small bowl, whisk together the all-purpose flour and baking powder.
  6. Mix Batter: Gradually add the flour mixture to the wet ingredients, stirring until just combined. Then, pour in the milk and mix until the batter is smooth but do not overmix.
  7. Layer Batter and Apples: Pour half of the batter evenly into the prepared loaf pan. Top with half of the apple mixture. Spread the remaining batter over the apples, then top with the remaining apples, pressing them down gently to embed into the batter.
  8. Add Cinnamon Sugar Topping: Sprinkle the reserved cinnamon sugar mixture evenly over the top of the assembled bread.
  9. Bake the Bread: Bake at 350°F for about 1 hour, or until a toothpick inserted into the center comes out clean. After baking, allow the bread to cool in the pan for approximately 30 minutes to set.
  10. Prepare and Drizzle Glaze: While the bread cools, whisk together the powdered sugar and milk until smooth to create a glaze. Drizzle the glaze over the cooled bread for a sweet finish.
  11. Serve: Slice the bread and serve it as a delicious breakfast treat or dessert. Enjoy!

Notes

  • Ensure apples are peeled and evenly chopped for consistent distribution.
  • Do not overmix the batter to keep the bread light and tender.
  • Use a toothpick to check doneness; if it comes out sticky, bake a few minutes longer.
  • The bread is best served after it cools and the glaze sets.
  • Storage: Keep in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
