These Air Fryer Spicy Dill Pickle Chips are a crispy and flavorful snack that’s perfect for satisfying your pickle cravings! Thinly sliced potatoes are marinated in pickle juice and dill, then air-fried to golden perfection with a touch of spice.

Ingredients

Potato Chips:

  • 1 medium russet potato (about 10 ounces), thinly sliced
  • Juice from 1 (16-ounce) jar of pickles
  • 1 tablespoon plus 1 teaspoon dried dill, divided
  • 1 1/2 teaspoons extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper (increase for more heat)

Optional for Serving:

  • Greek Yogurt Ranch Dip

Instructions

  1. Marinate Potatoes: Place sliced potatoes in a bowl. Pour pickle juice over potatoes, add 1 tablespoon dill, and stir to coat. Marinate for 1 hour, stirring occasionally.
  2. Season Potatoes: Drain potatoes and pat dry. Toss with olive oil, salt, garlic powder, cayenne pepper, and remaining dill.
  3. Air Fry: Arrange potatoes in a single layer in the air fryer basket (cook in batches if needed). Air fry at 325°F (163°C) for 20 minutes, tossing every 5-7 minutes, until golden brown and crispy.
  4. Serve: Serve hot with Greek Yogurt Ranch Dip, if desired.
