This incredibly moist 7 Up Cake is a delightfully easy dessert featuring a subtle lemon-lime flavor from the soda. Ingredients

Cake

  • 1 15 ounce box yellow cake mix
  • 1 3.4 ounce instant vanilla pudding mix
  • 4 large eggs
  • ¾ cup vegetable oil
  • 7.5 ounces 7-Up soda

Icing

  • 2 cups powdered sugar
  • ½ cup 7-Up soda

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 325 degrees F. Grease a 12-cup bundt pan with nonstick spray to ensure the cake won’t stick.
  2. Mix Cake Ingredients: In a large bowl or using a stand mixer with a whisk attachment, combine the yellow cake mix, instant vanilla pudding mix, and eggs thoroughly.
  3. Add Oil and Soda: Stir in the vegetable oil until just combined. Then, gently mix in the 7-Up soda at low speed until the batter is smooth, being careful not to overmix to preserve the soda’s carbonation.
  4. Bake the Cake: Pour the batter evenly into the prepared bundt pan. Bake for 45 to 50 minutes, or until a cake tester inserted into the thickest part of the cake comes out clean.
  5. Cool Cake: Remove the cake from the oven and let it cool in the pan for 20 minutes. Then turn the cake out onto a cooling rack or plate and allow it to cool completely, about 40 additional minutes.
  6. Prepare Icing: Whisk together the powdered sugar and 7-Up soda until you reach your desired icing consistency.
  7. Ice the Cake: Drizzle the icing over the cooled cake. Optionally, top with sprinkles for added decoration and texture.

Notes

  • You can use a lemon cake mix and lemon pudding mix for a stronger lemon flavor.
